There are many methods for making coffee caviar, and this recipe is one of the easiest. You will need:
- 1 cup of espresso or strong coffee
- ¼ cup of sugar
- ½ teaspoon of agar agar
- 1 cup of vegetable oil
- A pipette, syringe or squeeze bottle
The night before, put your cup of oil in the fridge and let it cool overnight. This will help you achieve that perfect, rounded shape that won’t disintegrate.
When you’re ready to make your caviar, start by bringing the coffee, sugar and agar agar to a boil. Let it boil for one minute, then remove it from the heat and set aside for 10 minutes. While you’re waiting, retrieve your oil from the fridge. If you can, keep it on ice to help it maintain temperature. As the oil comes to room temperature, it can cause the caviar to congeal unless you keep it cold until you're ready to move on to the next step.
Once your coffee solution has cooled for 10 minutes, use your pipette or squeezing device to transfer the solution to the oil. Squeeze it out slowly, and you’ll see your caviar form and drop to the bottom.
Finally, strain your caviar and rinse with cold water until the oily residue disappears. Now you’re ready to show off your skills and make any dessert or coffee drink more exciting.
